Duck Fat Smashed Potatoes

  • 2 lbs. baby or multi colored young potatoes
  • 2 T water
  • 3 sprigs of fresh thyme with leaves removed
  • 2½ T duck fat
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp granulated garlic


  1. Place potatoes and water in a microwave-safe bowl. Cover and heat on high in a microwave until fork tender, about 8 minutes.
  2. On a sheet of parchment, smash potatoes to ¾’ flat using the side of a cleaver or any flat sturdy object 
  3. Season both sides with the salt, pepper, and garlic
  4. Place duck fat in a cast iron skillet (or any heavy bottomed skillet) and pre-heat on med-high heat for 3-4 minutes
  5. Place each potato flat side down in the duck fat. Cook for approx. 8 mins until a crispy crust has formed, flip potatoes and repeat
  6. Remove from heat, salt to taste, garnish with fresh thyme, and serve
