Herbed Mushroom Smashburger | 2022 Le F.P. Wine Pairing


This smashburger pairs beautifully with 2022 Estate Le F.P., highlighting the wine’s earthy depth and aromatic lift. Mushrooms and Gruyère echo the wine’s savory character while allowing its red fruit and floral notes to shine.

Ingredients

Mushroom Topping

  • 8 oz cremini or mixed mushrooms, finely chopped
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp fresh thyme
  • Pinch of salt and pepper

Burgers

  • 1½ lbs ground beef (80/20 recommended)
  • Salt and pepper
  • 4 slices Gruyère cheese
  • 4 brioche or potato buns
  • 1 tbsp butter

Optional Garnish:

  • Thinly sliced red onion
  • Arugula

Instructions

1. Make the mushroom topping

Heat olive oil in a skillet over medium-high heat.
Add mushrooms and cook until browned and moisture has evaporated, about 5–6 minutes.
Add garlic and thyme and cook 1 minute more.
Season with salt and pepper and set aside.

2. Form the burger balls

Divide ground beef into 4 loose balls. Do not compress tightly—smashburgers should remain airy.

3. Sear and smash

Heat a heavy skillet or griddle over medium-high until very hot.
Add a touch of butter.
Place beef balls on the surface and immediately smash thin with a spatula or press.
Season with salt and pepper.
Cook 2–3 minutes, flip, top with Gruyère, and cook 1–2 minutes more until melted.

4. Toast the buns

Lightly toast buns in the same pan with a bit of butter.

5. Assemble

Spoon mushroom mixture onto the bottom bun.
Add cheeseburger patty.
Finish with optional red onion or arugula and top bun.
