Introducing an Exciting New “Venture”! Our first ever Apple Rosé


Maybe you’ve had a co-fermentation before, but have you ever had a multi-fruit co-fermentation? You may be asking yourself: Chase, what is a co-fermentation? Well, it’s when two things are fermented together in the same tank or vat. In the wine industry, this is most often two grape varietals, one example being our recently released 2020 “Chamise”, a co-fermentation of Estate Grenache and Graciano.

So now to the fun part, the release of the 2022 Carhartt Venture “Home on High,” our very first multi-fruit co-fermented wine! You heard it right, it’s a co-fermentation of two different fruits: grapes and apples!

During the 2022 vintage I got the opportunity to harvest some delicious apples from a friend’s organic orchard in the SYV. We milled (pressed) the apples and pumped the juice into a holding tank. The apple juice began a native (yeast) fermentation, and during its beginning stages, I pumped in some Grenache Rosé juice (unfermented). The apple juice and the grape juice then slowly fermented together, and at the tail end of primary (alcoholic) fermentation, we bottled this beauty in champagne glass under a crown cap. The juice then finished fermenting under pressure, capturing the last bit of CO2 in bottle, making this drink fun and fizzy!

This grape/apple wine is a perfect continuation of the Venture ideology: push the limits of my own knowledge and understanding of wine and its products, and provide the consumer with interesting beverages that are stimulating and delicious!

This wine was not fined or filtered, meaning it has a slightly hazy appearance in the glass. It was bottled without the use of sulfites, relying on the carbonation to protect it into the future. It is not sweet, but rather bursting with floral and fruit flavors. At just above 10% alcohol, this wine is a perfect accompaniment to hot days, warm evenings, backyards hangouts, or any situation that says “lets drink something fun.”

The name “Home on High” refers to the translation of the orchard owner’s last name: Garacochea. His family is of Basque descent, and they still have a family property in the Basque Country, where their home sits high in the mountains.
