This vibrant, seasonal dish was designed to mirror the lifted, expressive character of our 2023 Estate Grenache. Roasted delicata squash brings natural sweetness and caramelized depth, while pomegranate seeds add bursts of brightness that echo the wine’s wild strawberry and blood orange notes.

Fresh mint introduces a cooling herbal lift, and whipped feta adds a creamy, tangy element that balances the wine’s spice-driven profile. The result is a lively, textural pairing—fresh yet grounded, playful yet composed—perfect for showcasing Grenache’s energy, fruit, and aromatic charm.

Ingredients

For the squash:

  • 2 delicata squash, halved, seeded, sliced into half-moons
  • 2 tbsp olive oil
  • Salt + pepper
  • ½ cup pomegranate seeds
  • ¼ cup fresh mint, torn

For the whipped feta:

  • ½ cup feta
  • ¼ cup Greek yogurt
  • 1 tbsp lemon juice

Instructions

  1. Toss squash with olive oil, salt, and pepper. Roast at 425°F for 20–25 minutes until caramelized.
  2. Blend feta, yogurt, and lemon juice until smooth.
  3. Spread whipped feta on a platter, top with roasted squash.
  4. Finish with pomegranate seeds and mint.
