Easy Turkey Meatloaf

  • 1 ½ lbs. ground turkey breast
  • 1 medium sized onion, chopped well
  • 3 stalks celery, chopped well
  • 3 cloves garlic, chopped
  • ¼ cup parsley, finely chopped
  • 1 egg
  • 1 tablespoon tomato paste (or 2 tablespoons ketchup)
  • 1 tablespoon Worchestire sauce
  • 1-2 pieces of bread, torn into small pieces
  • 2 tsp. salt and 1-2 tsp.pepper

  1. Oil or butter a bread/loaf pan (I prefer glass) and pre-heat the ovento 350 degrees.
  2. In a 10 skillet, heat a little olive oil and saute the onion, celery, and garlic until softened, but not browned. Remove and let cool for 5 minutes.
  3. In a large bowl, mix turkey,sauteed vegetables and remaining ingredients until well blended.
  4. Pat into the loaf pan and bake for about an hour – it should be nicely browned but not burned at the edges. Remove from oven and let cool slightly before slicing.

This is an easy middle of the week preparation – serve with mashed or stovetop potatoes of choice and a large salad for a simple, comfort food meal. Perfect with Rebel Roan!!
