Combine all the ingredients (except the chicken) in a bowl and mix.
Spatchcock the chicken by removing the backbone with kitchen shears. Rub the marinade both under and on top of the skin. Refrigerate uncovered breast side up for 2-24 hours.
Preheat the oven to 425 °F and line a large rimmed baking sheet with foil. Place the bird breast side up on the baking sheet, then arrange the legs so they are parallel. Bake uncovered till it reaches an internal temp of 165 °F , approx. 45 min. Remove and rest meat 10-15 min.
