Instructions
Preheat oven to 400°F.
Season pork tenderloin generously with salt and freshly cracked black pepper.
Heat olive oil in a skillet over medium-high heat.
Sear pork on all sides until evenly browned.
Add sliced fennel, orange juice, orange zest, and white wine to the pan.
Transfer skillet to the oven and roast for 15–20 minutes, until pork is cooked through.
Remove pork from oven and let rest briefly.
Slice and spoon pan juices, fennel, and citrus over the top before serving.
