1. Prepare the Sauce: In a small bowl or a measuring cup, mix together 3 tablespoons of water, brown sugar, apple cider vinegar, and miso. Stir until smooth and well combined.
2. Season the Pork Chops: Sprinkle the pork chops generously with salt and black pepper. Make sure to use plenty of pepper, as it balances the sweetness of the caramel sauce.
3. Cook the Pork Chops: Heat a large skillet over medium heat. Add the oil and place the pork chops in the skillet. Cook them, flipping every 2 minutes, until they are browned on both sides and the internal temperature reaches about 135°F. This will take 10 to 15 minutes, depending on the thickness of the chops. If your chops have a fat edge, use tongs to hold them upright and sear the fat for about 1 minute until it’s crisp. Once cooked, transfer the chops to a plate and let them rest for 5 minutes. Pour off any excess fat, leaving about 1 tablespoon in the skillet.
4. Cook the Apples: In the same skillet, arrange the apple slices in a single layer. Cook over medium heat without moving them until the underside is browned, about 2 to 4 minutes. If the skillet starts to smoke, lower the heat. Pour in the brown sugar mixture and cook while stirring and scraping up any browned bits from the skillet. Continue cooking until the sauce thickens enough to coat the back of a spoon, which should take about 1 to 3 minutes, but be careful not to let the sauce burn.
5. Finish and Serve: Turn off the heat and return the pork chops and any accumulated juices to the skillet. Coat the chops in the caramel sauce. Serve the pork chops topped with the caramelized apples and a spoonful of the sauce.
